A good glass of wine, much like a visit to Sage Space, is all about balance. Our very first Sage Session: A Somm at Sage was about celebrating that harmony—between flavour, self-care conversation, and the simple joy of a shared experience.
That evening we welcomed both familiar and new smiles into our space, transforming the clinic into an intimate wine salon for the night. Under the expert guidance of sommelier Anthony Philip, guests discovered six exceptional wines, each thoughtfully paired with a curated selection of cheeses.
The Art of Pairing: Wines That Speak, Cheeses That Listen
Anthony’s wine list wasn’t just a lineup of bottles—it was a journey. Every glass poured had a story and a feeling. Some wines were bold and full of history, others light and playful.
- Domaine Jousset Exile Rosé Pet-Nat 2023 – A natural sparkling rosé, wild and energetic, with bright cherry juice and delicate rosehip tea notes.
- Avani Amrit 2023 (Boon Wurrung Country) – A crisp, mineral-driven white that speaks of coastal origins, bursting with white peach, nectarine, and apple pear.
- Marie & Sylvie Le Petite Courselle Les Copines Blanc 2023 – Fresh, fragrant, and full of charm—this wine, made by two trailblazing sisters, is a lesson in effortless elegance.
- Ochota Barrels A Forest (2024) – A structured, refined red with a whisper of medicinal herbs and a lingering mineral finish.
- Elisabetta Foradori Lezer (2023) – The queen of northern Italian winemaking delivers once again, crafting a wine that is vivid, youthful, and effortlessly drinkable.
- Momento Mori Fistful of Flowers (2023) – A natural wine in the truest sense, floral and fresh, from the Chalmers family who has set the gold standard for minimal intervention winemaking.
With wines this expressive, the cheese pairings had to hold their own. And they did.
- Le Délice de Bourgogne – A cheese so indulgent, it’s a unanimous favourite.
- L’Amuse Brabander Goat’s Milk Gouda – Pale, light, and nutty, with a caramel finish that made each bite feel like a little luxury.
- Pyengana Cheddar – Sharp, crumbly, and complex, this Tasmanian classic carried hints of summer grass, honey, and wild herbs.
More Than Just a Tasting
Sage Sessions aren’t just about food and drink. It focuses on the connection that comes from taking a moment to slow down, appreciate, and indulge in simple luxuries. The best part of the night wasn’t the wine or the cheese—but the conversations shared and relationships built.
By the end of the night, glasses were raised to toast between former strangers who now share a connection thanks to this wonderful evening!
